Three sauces for steaks

INGREDIENTS

Pepper sauce

  • 1 shallot, chopped
  • 1 knob butter
  • 2 tbsp brandy
  • 125ml white wine
  • 1 sprig thyme
  • 1 tub thick cream (250ml)
  • 1 dash salt and milled pepper
  • 3 tbsp green peppercorns

Mushroom sauce

  • 1 shallot, chopped
  • 2 garlic cloves, chopped
  • 2 knobs butter
  • 1 punnet sliced white mushrooms (250g)
  • 1 sprig thyme
  • 125ml white wine
  • 1 tub thick cream (250ml)
  • 1 dash salt and milled pepper

Easy béarnaise

  • 125ml butter
  • 1 tbsp lemon juice or white wine vinegar
  • 1 tbsp tarragon
  • 1 pinch salt
  • 2 extra-large egg yolks
  • 2 tsp chives, finely chopped

METHOD

For the pepper sauce

  • Sauté shallot in a knob of butter.
  • Add brandy and allow alcohol to cook off.
  • Add wine, thyme, cream and 1 Tbsp (15ml) milled black pepper, and reduce by half. Season with salt and add green peppercorns.
  • Simmer for 5 minutes and serve.

For the mushroom sauce

  • Sauté shallot and garlic in butter, then set aside.
  • Heat another knob of butter and brown mushrooms.
  • Return shallots to pan.
  • Add thyme, wine and thick cream.
  • Simmer until reduced by half.
  • Season and serve.

For the easy béarnaise

  • Heat butter, lemon juice (or white wine vinegar), tarragon andpinch of salt in a small saucepan.
  • Pour a little hot butter into egg yolks, then whisk the remaining egg mixture into butter.
  • Whisk continuously to thicken.
  • Stir in chives and serve.
