- 2 cups sugar cubes
- 3 tbsp grated ginger
- 1 cup tomato juice
- 1 cup PnP white wine vinegar
- 2 red chillies, chopped
- Combine all ingredients in a saucepan.
- Stir until sugar has dissolved, then bring to the boil and simmer for about 7 minutes, or until slightly thickened.
- Pour into a sterilised jar and cool.
- Stir through cream cheese and serve as a chip dip or spread.
